Gluten Free Tomato Basil Soup for one*

A warm and comforting go-to recipe for solo dinners. Pairs well with gluten free grilled cheese or a salad.


1 T butter
2 cloves garlic, minced
3 cups tomato juice (I strained it out of 2 big cans of plum tomatoes that I used in another recipe)
2 fresh basil leaves, sliced
1 t honey
1/2 t pink Himalayan salt
1/4 tablespoons black pepper
1 pinch red pepper flakes
2 drops Young Living Basil Vitality Essential Oil (never ingest oils that are not Young Living Vitality oils)
1 toothpick dip of Young Living Oregano Vitality Essential Oil
2 T potato flour (this will give it that silky texture, without the addition of wheat flour)


Saute garlic in the butter, for barely a minute. Add the next 7 ingredients, and simmer for 15 minutes. Whisk in potato flour very well. It will be silky and smooth, and not taste potatoe-y at all. Drizzle with extra virgin olive oil and balsamic vinegar to serve.
