Today I’m sharing one of my favorite summer time recipes! This fresh chopped salsa, known in our house as rainbow salsa, will be perfect for your Labor Day get togethers, family dinners or to snack on! Even better, if you have a lot of garden veggies around, you’ll have access to all the ingredients you’ll need! The secret ingredient to our rainbow dip however is Lime Vitality. Adding 3-4 drops at the end gives it the perfect citrus kick.


6 Roma tomatoes diced

1 yellow, red, and orange bell  pepper seeded and diced

1 medium purple onion finely diced

2 jalapeño peppers seeded and finely diced

1 large avocado peeled, pitted and diced

15 oz can corn drained (or from 1 cooked cob of corn)

15 oz can black beans well rinsed and drained

1/2 bunch of cilantro About 1/2 cup chopped

3-4 drops Lime Vitality Essential Oils

1/2 cup light Italian Dressing

4 medium garlic cloves pressed

1 tsp sea salt or to taste



Add veggies, beans and cilantro to a large bowl. Toss with dressing and stir in the Lime Vitality Essential Oil.

Serve with tortilla chips!

A few tips! I usually layer my dip and mix right before serving (that’s where the nickname rainbow salsa comes from). I also wait to cut the avocado until before serving as well. You can add the avocado pits to help the avocado from browning if that is not an option.
